Box Mix Remixes

You really can’t go wrong with a box cake mix. I mean half the work is already done for you and most of the time all you have to do is add some water and/or eggs and you are good to go. I remember growing up we would frequently make yellow cake with chocolate icing as it was my dad’s favorite. Recently, I have started to see people turn box cake mixes upside down, making them into something other than just your average white or yellow cake. Today I am sharing some of my favorite remixes and tbh, new favorite recipes. Enjoy!

Strawberry Cream Cookies

These are my new favorite cookie – yeah I said it. So simple to make and just in time for Valentine’s Day, these cookies are definitely a step above.

Ingredients
  • 1 box strawberry cake mix
  • 2 eggs
  • 1/2 cup oil
  • mix-in’s of choice (I used white chocolate chips but you can use sprinkles or any kind of chocolate chips)
Instructions
  • Mix all ingredients in a bowl, place spoonful size dollops on a sheet pan and bake at 350 degrees for 10-12 minutes
Chocolate Chip Cookie Bars

I love a good chocolate chip cookie and this recipe takes half the time and ingredients to pull it together. Adding this to my “oh crap I forgot we have company coming over” rotation.

Ingredients
  • 1 box of yellow cake mix
  • 2 eggs
  • 1/3 cup of oil
  • 12 oz bag of chocolate chips
Instructions
  • Mix all ingredients in a bowl, spread evenly in a 9×9 sheet pan and bake at 350 degrees for 20-25 mins
Cake Mix Cobbler

My babe said and I quote “this is the best cobbler I have ever had” and “I ate the two other corner pieces, no shame”. This is a fun version of the infamous dump cake and while the ingredients look a little funny, it’s delish (see quote above)

Ingredients
  • 1 box of white cake mix
  • 4 cups of frozen or fresh fruit (literally any fruit that suites your fancy, we used frozen mixed berries)
  • 12 oz of ginger ale or sprite (don’t knock it till you try it)
Instructions
  • In a 9×13 sheet pan, pour in the frozen or fresh fruit
  • Sprinkle the entire box of white cake mix on top
  • Pour the ginger ale all over the fruit and cake mix, do not mix!
  • Bake at 350 for 35-40 minutes
