Bucatini Carbonara

Sometimes guys you just gotta indulge. This pasta recipe is easy and so rich! It’s perfect for an at home date night or a night when you need some good ol comfort food.

Ingredients

  • 6 ounces of spaghetti
  • 1 Tablespoon of olive oil
  • 4 ounces of pancetta or bacon
  • 1 finely chopped shallot
  • 1 finely chopped garlic clove
  • 1 cup heavy cream
  • 1/4 cup of grated Parmesan (I highly suggest getting the good stuff here)
  • 2 egg yolks (this is what helps make the pasta extra creamy)
  • Salt and pepper
  • Chopped parsley for garnish

Instructions

  • In a large pot of boiling salted water cook the pasta until al dente. Once cooked drain the pasta reserving 1/4 cup of pasta water (this is going to help thicken the pasta sauce)
  • While the pasta is cooking, heat the oil in a large skillet. Add the pancetta or bacon and cook until the fat is rendered out.
  • Add the shallot and garlic and cook until soft and fragrant (about 1-2 minutes)
  • Add the cream and simmer until it starts to thicken (about 2-3 minutes)
  • Add the hot cooked pasta to the skillet and mix to coat in the heavy cream sauce
  • Remove from the heat and add the reserved pasta water, egg yolks and grated Parmesan.
  • Thoroughly mix and season with the salt and pepper
  • Garnish with the chopped parsley
  • Enjoy!
