After being on a banana bread binge I felt like it was time for some other fruit to have a moment – so ladies and gents, her. This recipe has lemon poppyseed vibes but sub the poppyseeds for blueberries. Highly recommend having this with a glass of lemonade while sitting next to pool (also, pls invite me).
Ingredients
Cake
- 3/4 cup unsalted butter
- 1 cup granulated sugar
- 2 tablespoons lemon zest
- 4 eggs
- 1 teaspoon vanilla extract
- 2 cups plus 2 tablespoons all-purpose flour, divided
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup whole milk
- 1/4 cup greek yogurt
- 1 cup blueberries
Cream Cheese Frosting, optional but highly recommended
- 3/4 cups unsalted butter, softened
- 4 oz cream cheese
- 2 cups powder sugar
- 1 tablespoon lemon zest
- 1/2 tablespoon of vanilla extract
Instructions
Cake
- Preheat oven to 350 and grease a 9×5 inch loaf pan
- In the bowl of a stand mixer fitted with the paddle attachement, add the sugar and lemon zest. Use your fingers to mix together the zest and sugar so the oils from the lemon can coat the sugar.
- Add the butter to the sugar/zest mixture and cream together until light and fluffy, about 2 minutes
- Add one egg at a time to the creamed butter, making sure to scrap down the bowl.
- Add the vanilla and mix until well combined.
- In a separate bowl, mix 2 cups of flour, baking powder and salt.
- Add the flour mixture, alternating with the milk and Greek yogurt, beginning and ending with the flour mixture. Do not over mix!
- Mix the blueberries with the reminding 2 tablespoons of flour. Gently fold the blueberries into the batter using a spatula.
- Transfer batter to prepared loaf pan and bake for 60-65 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, loosely tent with foil.
- Remove the cake from the oven and allow to cool completely.
Cream Cheese Frosting
- In a medium bowl, with an electric mixer (or by hand if it is an upper body day), beat butter until smooth and creamy
- Beat in softened cream cheese, just until combined
- Beat in lemon zest and vanilla
- Add powder sugar 1/2 cup at a time and mix on low speed. Once all powder sugar is added mix another 2-3 minutes until whipped and thick.
